A fresh cucumber salad coupled with sliced shallots is very suitable to be served in the summer, because it is refreshing.
Cucumber Onion Salad is suitable to be served with spicy meat, such as chicken or lamb satay or even Chicken Curry. Are you curious?

• 2 long English cucumbers
• 1/2 sweet garlic
• 1/3 cup of white vinegar or apple cider vinegar
• 2 tablespoons of vegetable oil or mild olive oil
• 2 tablespoons of water
• 2 teaspoons of sugar
• 2 tablespoons of fresh fennel
• salt and pepper to taste

Tip: If you use a regular salad cucumber, you should peel the skin and remove all the seeds, because the flavor tends to be bitter.

1. Wash cucumbers and peel if desired. Then slice cucumbers and thin onions.
2. Mix vinegar, vegetable oil, water and sugar. Mix the mixture with cucumber and chill for at least 1 hour or up to 4 hours. (Stir or stir several times when marinating).
3. Place in a bowl and stir with fennel, salt and pepper to taste.
4. After that, onion cucumber salad is ready to be served.
